Course summary

We are internationally renowned for our research. We have key strengths in food flavour chemistry and flavour perception. Our research covers all levels of food and drink production. Starting with raw materials, through processing to consumer preference, and subsequent effects on the body.

Major research interests are:

  • flavour release from foods

  • food microbiology and safety

  • food formulation
